Fudgy Avocado Brownies

I have been enjoying the chocolatey, fatty goodness of brownies made with avocado for the last week. I found a recipe that got me started and tweaked it ever so slightly. Below you will find my version of these delicious, low-carb, healthy fat brownies.
Low-Carb, Healthy Fat Diet
I never count calories and I don’t often count macros but every now and then I like to check in with myself to see how I’m doing with my low-carb, healthy fat eating plan. This is especially helpful when I start to feel a little puffy which is usually a sign I’ve allowed “carb creep” to push me out of (my low-carb) bounds.
I really wanted to dial things in as far as my carbs and fats go. I knew I was going to need something to help me get enough healthy fats to make me feel satisfied and full so I wouldn’t pound protein. I do eat pretty high protein but I still like to keep my fats slightly higher than my protein. These fudgy avocado brownies did the trick. Delicious, maybe even a bit decadent, low-carb and filling.

Fudgy Avocado Brownies
Notes
The NET CARBS for 1 Brownie = 6 this subtracts the fiber and 1/2 the sugar alcohols from the total carbs. I have included 1/2 the sugar alcohols in the "fiber" section of the nutrition notes.
For those counting total carbs or who like to subtract all sugar alcohols, here are the counts for 1 brownie: Total Carbs = 13.5, Fiber = 6, Sugar Alcohols = 3.25
These brownies are rich. You could easily cut them in half and still enjoy a delicious treat with only 3 net carbs!
Ingredients
- 2 Ripe Avocados (approximately 250 grams)
- 2 Eggs
- 4 TBSP Organic Cocoa Powder
- 1 tsp. Organic Pure Leaf Stevia Extract Powder (Trader Joe's is my favorite)
- 1/2 tsp. Vanilla Extract
- 3 TBSP Organic Coconut Oil
- 3/4 Cup Lily's Sugar-Free Chocolate Chips
- DRY STUFF
- 1 Cup Almond Flour
- 1/4 Cup Swerve Confectioners Sweetener
- 1/4 tsp. Baking Soda
- 1 tsp. Baking Powder
- 1/4 tsp. Salt
- STUFF
- Couple of Medium Sized Bowls
- Rubber Spatula
- Large Food Processor, Hand Mixer, or Standing Mixer
- Small Square Baking Dish or Small Rectangular Baking Dish: I like to use a pyrex 7x11 in. glass baking dish , if comes with a cover!
Instructions
- Pre-heat oven to 350 degrees
- I use a Food Processor to make these brownies so that's what I'll refer to in the instructions.
- Peel the avocados and put the 'meat' in the food processor, process until smooth
- Add the two eggs, the vanilla, the powdered stevia, the cocoa powder, and the vanilla. Process until well combined. Stop, scrap sides and process a little more. Make sure and scrape the bottom so all of the avocado gets mixed into the batter.
- Put the chocolate chips and 3 Tablespoons of coconut oil in a microwave safe bowl.
- Place the bowl in the microwave and heat on high for 30 seconds, stir with a fork, mixing well then heat again for 15 seconds. Again, stir with fork until all the chocolate chips are melted and combined with the coconut oil.
- Scrape the chocolate/coconut oil mixture into the food processor with the avocado batter and process until well combined.
- In another bowl, combine the almond flour, baking soda, baking powder, salt and Swerve.
- Add the dry mixture to the food processor and process until well combined with the chocolate, avocado batter.
- Grease your baking dish or line it with parchment paper. I like to use a paper towel and wipe off the excess coconut oil from my Tablespoon and then smear it all over my baking dish.
- Spread the brownie mixture even in the baking dish.
- Bake in hot oven for 35 minutes.
- Remove from oven and let cool a bit. (we like these brownies warm)
- Cut into 12 (pretty good sized) squares.

The Simplicity of Wellness
If you are embarking on a low-carb or ketogenic lifestyle and are trying to keep count of your macros (carbs, protein, fats, fiber) it can be frustrating and cumbersome. I use a couple of website to look up ingredients and nutritional information: Cronometer and SelfNutritionData. While these do get the job done, my husband gifted me with a very cool kitchen scale that counts nutritional information. LOVE IT! It does come with a little book with codes so you can tell the scale what you are measuring so it’s not totally automated. Even so, it is still super easy and convenient. Here’s a link to the scale if you want to check it out. I actually measured an entire dinner salad today with my scale. I always wondered what the carb count of my giant family salad was. In case you care, here’s what it came out to:
Large Orange Pepper, Huge Cucumber, 8 Big Scallions, Giant Heirloom Tomato and 1 bag of Spring Mix and 1 bag of Sweet Butter Lettuce. I figure it will serve 8. Here are the counts per serving: Calories 22, Fat 0, Carbs 4, Fiber 1.25, Protein 1.25, Net Carbs 2.75. Neto!
You can find the original recipe for the brownies here. I suspect there are other great recipes on this site so check it out. My brownies have a little more chocolate. My family is a little sensitive to erythritol, the sugar alcohol in Swerve. All that means is they can often tell when I use Swerve, not good nor bad, just a thing. I found that if I increase the chocolate chips a bit they don’t get any Swerve after taste : )
